The seeds are actually dried fruits that are used in mixed spices, chutneys, stews, soups and bread. The oil that is obtained from the seeds is used in perfumes, for flavouring liquors and for medicinal purposes. Cumin seeds have an earthy aroma, and a moderately bitter and pungent taste. When the seeds are fried, they bring out a nuttier flavour.
